Also known as: kunafa Nabulsieh, knafeh Nabulsi, الكنافة النابلسية
Knafeh Nabulsiyeh is named after Nablus and is one of the most famous sweets in Palestine.[1]
What makes it Nabulsi
- The cheese. A sweet white cheese, cut up and soaked in water first to remove the salt.[1]
- The colour. The ghee is mixed with knafeh colouring, a food dye.[1]
- Two textures. Nablus knafeh comes in two kinds, khishneh (coarse) and na’meh (fine). The fine kind is more common.[2]
- Syrup and nuts. A 2009 description from Nablus mentions semolina, white cheese and syrup, sprinkled with pistachio and rose water.[3]
The heritage of the dish, its cheese and the giant knafeh of 2009 are covered in Knafeh in Nablus.
